This Extra Brut Bistrotage B.10 NV is a Champagne produced by the company Charles Dufour- Domaine Francoise Martinot according to natural principles without the use of chemicals. It is made from pure Pinot Noir grapes, from vines from the Cote de Bar that rest on limestone-clay soils. The harvest dates back to 2010, the fermentation of the base wines takes place in large French oak barrels, as does the ageing. Subsequently, no filtration or clarification is carried out and no dosage, even the use of sulphur dioxide is prohibited. Champagne Extra Brut Bistrotage is a complex and lively sparkling wine with a luminous straw yellow colour and a fine, persistent perlage. The nose has a predominantly fruity profile, along with aromas of yeast and bread crust, and mineral notes. On the palate it is soft and creamy, reminiscent of the fruit on the nose with good persistence.
Charles Dufour is a young winegrower and oenologist who cultivates 6 certified organic hectares in Landreville, in the Côtes des Bars region of the Aube département. Coming from a family steeped in the winemaking tradition of this off-the-beaten-track Champagne region, some of the vines were planted by his grandfather and are quite old. Charles prefers to work with natural yeasts for the fermentations of his wines and the wines are free of added sulphur. Charles has taken an interest in using Pinot Blanc in his cuvées, with this grape variety featuring prominently in his Bulles de Comptoir bottlings. He recently bottled a single varietal Pinot Blanc from a single vineyard, Le Champs du Clos. Dosage is extremely low, sometimes only 2 g/litre. The Liqueur de tirage is a mixture of wine and cane sugar and the yeasts used in the secondary fermentation come from his own vineyards. None of his wines have ever been fined or filtered.
