‘Galipe’ comes from a local idiom meaning vineyard. This cuvée is a blend of the different plots located in Coulommes la Montagne. It is a perfect expression of terroir and grape varieties. The wine is complex, well balanced, with aromas of ripe fruit, brioche, a little toasted. To be enjoyed without hesitation during an aperitif or with a white meat stew.
protagonist, and this evidently not by chance: the particularly cold terroir and the chalk-rich substratum determine the perfect micro-climatic conditions for the optimal expression of this variety. Jean's vineyard park is made up of several small plots (6000 m2 on average), making it possible to work 'from the vineyard to the cellar', managing each plot separately and thus enhancing the expression of the individual climats. Jean's objective/philosophy is therefore to be inspired by nature's processes by implementing only minimal interventions to preserve its integrity. Even without any real certification, Jean manages his vineyard on a par with organic and beyond, applying entirely natural methods such as 'sexual confusion' to combat unwanted insects or green techniques for pests. In the cellar, manipulations are kept to a minimum and technology is only used to ensure stable temperatures during the metabolic and ageing processes, which always take place spontaneously. The indigenous yeasts naturally present in the grapes thus ensure the first alcoholic fermentation, followed by the bacterial flora induced by temperature control complete the final fermentation and stabilisation processes. In this framework, the presence of worthy, in the form of fut or barrique, cannot be omitted, thus contributing to one of the most crystalline and fascinating expressions of Pinot Meunier within our portfolio.
