The wine is composed of 55% Chardonnay, 25% Meunier and 20% Pinot Noir from vineyards located in the villages of Moussy, Pierry and Chavot-Courcourt. The grapes are harvested by hand with careful selection, followed by direct pressing and selection of the first musts. The wine ferments in barriques, demi-muids and foudres. It then matures in wood for 8 months and matures in the cellar on the lees for at least 40 months, followed by at least 3 months of rest after disgorgement. Partial malolactic fermentation takes place and there is neither clarification nor filtration. Disgorgement takes place with liqueur vinifiée and barrel ageing. The terroir is characterised by 60% limestone and 40% flint.

Domaine Tellier is located in Moussy in the heart of Champagne, between the Montagne de Reims and the Côte des Blancs. The vineyard obtained exclusively from a skilful work of massal selection boasts an average age of 35 years with some of the oldest parcels dating back to 1964. Depending on the location, topography and soil structure, each lieudit reflects microclimatic conditions where plaster represents the common denominator for all. In the villages of Moussy and Pierry we find a part of the historic vineyards with a clear predominance of Pinot Meunier (59%) in addition to Chardonnay (35%) and Pinot Noir (6%). Here the deep soils combined with the limestone rock give the wines structure, power and length. In the villages of Chavot, Fontaine-sur-Aÿ and Cramant we find four more lieu-dits located on outcropping gypsum, a condition which determines great elegance and minerality. The agronomic practices have been HVE certified since 2016 and the organic conversion process is currently underway. The individual parcels are processed and vinified exclusively within fûts, demi-muids et foudres made with the best Vosges, Nièvre and Allier woods. The scrupulous and maniacal selection of woods is carried out directly by Quentin who favors fine-grained oak woods from nearby forests. All fermentations are carried out directly in wood with the sole aid of indigenous yeasts present on the skins which, year after year, become one of the key and characterizing elements of the Tellier cuvée. The minimum period dedicated to aging in wood is 8 months, during which the cuvées evolve until they acquire the salient features of their personality. During this period Quentin carried out several operations of bâtonnage and topping up in order to prevent any risk of oxidation. We then arrive at the bottling phase and the relative second fermentation without further filtration, clarification or addition of sulfur dioxide. This is followed by a long aging on the lees in the cellar, at least 40 months for all the cuvées.
