Wine born in Buxières-sur-Arce from Pinot Noir grapes, prepared according to the bleeding method. Long carbonic maceration, alcoholic fermentation on indigenous yeasts, prolonged vinification in oak barrels. The red fruits are accompanied by the complexity of the vinification. Always a nice acidity that accompanies and defines everything.
Vouette & Sorbée is one of the most prestigious Maisons in the renowned Côte des Bar, the southernmost region of Champagne. Located near Buxières-sur-Arce, in a picturesque area of rolling hills, the Domaine is nestled in an environment of outstanding natural beauty.
The Côte des Bar benefits from a milder climate than other parts of Champagne, along with a unique soil composition. The soils, similar to those of Chablis, are predominantly calcareous, rich in limestone and limestone marl, giving the wine a distinctive character.
Pinot Noir is the predominant grape variety, but there is no shortage of Chardonnay vineyards, which produce grapes of excellent quality. The entire Domaine is certified organic and biodynamic, reflecting a commitment to sustainability and healthy soil. Harvesting is done manually, with scrupulous care for each parcel, ensuring full ripeness of the grapes.
In the cellar, pressing takes place using a classic Coquard vertical press, followed by spontaneous fermentation using only indigenous yeasts. The base wines mature in wood, giving complexity and depth to the final wines. After a long period of maturation on the lees, dégorgement takes place without sugar dosage, preserving the authenticity and pure expression of the wine.
