Domaine François Carillon’s Bourgogne Rouge Pinot Noir is made from 100% Pinot Noir grapes grown in the territory of Corpeau, a hamlet of Puligny-Montrachet, as part of the famous Côte-d’Or. The vineyards of origin, about 60 years old, are rooted on limestone-clay soils and are farmed according to the principles of integrated pest management. In the winery, after a brief cold maceration, the clusters were subjected to soft pressing to produce the must. Alcoholic and malolactic fermentations took place in oak barrels (10% new). In the same containers, the wine was aged for a period of 12 months in contact with yeasts. Bottling took place following favorable lunar phases.
The François Carillon Domaine, created in 2010, is the long-lasting legacy of a wine family business that dates back to the 16th century in Puligny-Montrachet, a very typical wine village in south of Côte de Beaune - Burgundy’s most renown terroir for white wines.
Located in the heart of the village, the estate owns and manages today a sixteen-hectare-vineyard located in Puligny-Montrachet, Chassagne-Montrachet and Saint-Aubin. The estate produces about seventeen (depending on the harvests) different appellations, mainly in Chardonnay.
