Cantorì comes from a selection of Verdicchio grapes from micro areas of the vineyard in Serra San Quirico with predominantly sandy soil. These are the highest vineyards (350/370 metres above sea level) with an optimal position for ripening the grapes, always sunny areas with an extremely favourable micro climate. The grapes are harvested and selected by hand, in several passages. Only the best bunches, undamaged and perfectly ripe, or slightly overripe, can be used for the production of Cantorì. Harvesting takes place at the end of September, exclusively in the early morning hours, to prevent the grapes from arriving too hot in the cellar. The whole bunches are softly pressed to extract the must flower. Fermentation takes place in steel tanks, and the wine is matured on the lees for about 12 months, then in the bottle. Cantorì stands out for its marked longevity. Limited production with numbered bottles.
It is in the municipality of Serra San Quirico, amidst green hills designed by oak woods, vineyards and olive groves, that they find inspiration to build a life project that has been going on for more than 40 years.
In the 9 hectares of vineyards, the work of the Accadia family focuses on the enhancement of Verdicchio, the main grape variety of the Marche region, which finds its area of choice in the hills of the Castelli di Jesi.
Through the study of the soils, the selection of the grapes, the choice of harvest times and low yields, Angelo has developed over the years a profound knowledge of the terroir and a remarkable familiarity with the vine, making him one of the greatest experts on Verdicchio.
