The vineyard, planted some forty years ago, occupies the top of a small hill, forming a sort of dome with a slight slope (just 5%). Open and well ventilated, this plot offers an uninterrupted view of the vineyards and the village of Leynes.

This Saint-VĂ©ran Champ Rond has been enhanced by a long 20-month ageing period, with only a quarter of the barrels used, and has won us over with its ethereal air and mineral freshness that is particularly evocative and stimulating. From the very first nose, one is drawn into the freshness of a limestone cave, then breathes in the salty sea spray and visualises starfish, molluscs and crustacean shells. The soil is omnipresent and brings with it its share of spices, including delicate peppers, bergamot, liquorice and an oriental touch reminiscent of Ras El-Hanout.

This depth and the wine’s natural density are accentuated on the palate. The opening, full of fleshy and expressive fruit, with its flavours of BeurrĂ© Hardy pear, Reinette and Granny apple and yellow plums, gradually gives way to an exciting mid-palate, carried by a taut and invigorating structure, with a fine, spicy bitterness: orange peel, green pepper and bay leaves come to mind, but also the subsoil, the salty, active limestone that never ceases to excite the taste buds and make our mouths water. The expression of the soil is literally vibrant!

This superb Saint-VĂ©ran Champ Rond goes very well with iodized dishes: crab or Belon oysters come to mind, but you can also try sea urchins or even abalone. Unless you prefer a spicy sea bass tartare. With 2 or 3 more years, you might opt for oysters au gratin or a Saint-Pierre with spices, ‘Retour des Indes’ style, as proposed by the Roellingers, father and son, in their Maisons de Bricourt

Domaine Thibert
Domaine Thibert is first and foremost a family of artisan winegrowers who have always lived in the heart of the village of FuissĂ©. LĂ©on Thibert and Germaine Thibert, RenĂ© Thibert's parents, managed Domaine Thibert in FuissĂ©. In March 1992, Annette and Pierre Vessigaud, AndrĂ©e Thibert's parents, lived in their house in FuissĂ©. RenĂ© and AndrĂ©e Thibert, descendants of a lineage of winegrowers, started with a small plot of land in 1967. Their son Christophe returned to the estate in 1991, joined by his sister Sandrine in 1999. Today, the two carry on the tradition by combining their unique skills. Over the years, passion and know-how have been handed down from father to son, with an immense respect for nature and the work of past generations. Thanks to their knowledge of the vineyards, their experience and the passing on of their knowledge, the estate's wines testify to an acquired skill and profound sensitivity. The Thibert family, in Pouilly-FuissĂ©, raised their children as grape pickers, as did Antoine Thibert in FuissĂ©. The harvest tippers of the Thibert terroir in FuissĂ© reflect this commitment. A vineyard can only give its best with time. Chardonnay and Pouilly-FuissĂ© are appellations that have always been cultivated and vinified by the Thibert family. The development of these lands, some of which have been handed down for eight generations, is an essential inspiration for Christophe and Sandrine. One of the particularities of the estate is that it covers all the crus of the southern MĂ¢con region. The fruit comes exclusively from their vineyards, testifying to the gratitude they feel towards their roots and requiring delicate and essential choices for the long-term future of the estate. Their aim is to combine traditional and modern practices. Their vineyards are managed with integrated viticulture. Thanks to their experience and knowledge, they respect the vines and soil by adapting to the climate, while maintaining the freedom they have always had. Christophe closely follows each stage of production: vineyard, vinification, ageing and packaging.
