The winery is a 200-year-old house with an underground cave (3 floors) that allows us to take advantage of the effects of gravity to process the grapes as gently as possible, as well as benefiting from the naturally cool environment and its optimum humidity for ageing wine. After extensive renovation, the cellar is now capable of processing 70,000 kg of grapes and ageing almost 50,000 litres in different containers: concrete, oak foudres and barrels of up to 600 litres (demi-muid).
Although the wine was aged until 2017, the first vintage produced entirely in the new cellar was made in 2019. They were able to vinify each parcel separately, a process that resulted in 45 different wines.
