Frédéric Cossard
Frederic Cossard is a young man who produces natural wine in Saint- Romain, in the Jura. An original and positive character, Frederic was not born into a family of winegrowers, but a passion for wine and a great joie de vivre are characteristics that have always accompanied him.
After working for years first in the milk trade and then as a wine merchant, he decided to start producing on his own by renting vineyards and starting his own business in 1996, where he now cultivates 7 hectares (still all rented), right in Saint Romain.
He bought a house with a cellar in the village in 1998 and moved there. His work is based on absolutely natural winegrowing principles and far from the use of any chemicals: vinification takes place spontaneously without added yeasts, and is free of sulphur dioxide.
Cossard uses a long maceration period of five to six weeks, and malolactic fermentation occurs while the wine is still on the skins. The barriques used for maturation are cleaned with ozone, not sulphur dioxide. His passion for his work has allowed Frederic to be recognised for the quality of his wines, pure and uncontaminated expressions of a fine terroir.
