Their story is first and foremost that of a passionate family legacy. A family that has worked hard and with great affection on the wine estate. Thus, the first vines were planted. Subsequently, the foundation of their business emerged. This was followed by a second generation, who developed the business with the same enthusiasm and dedication. Today, their vocation is to have created their own champagne brand with the desire to express a wine project that meets all their requirements. This is how Champagnes Mademoiselle Marg’O was born. Champagnes steeped in traditional knowledge, with a strong sense of identity and resolutely oriented towards the future.

Using their experience, they work passionately in the heart of the estate to cultivate and transmit the soul and personality of the Maison. Every manipulation is carried out by them and their guiding principle is the desire to develop modern, elegant and refined Champagnes while respecting nature and the land. This contributes to the style and personality of Mademoiselle Marg’O’s Champagnes.

They draw the essence of their different Champagnes from the meticulous work done in the vineyard. It all starts with the grape harvest. The grapes from their vineyards are harvested by hand with the utmost care and at the right ripeness, before being transported to their pressing house. The grapes are then pressed, variety by variety, slowly and progressively, to extract a pure juice rich in sugars and acids. They work with the 2 main grape varieties of Champagne. Chardonnay, prized for its minerality, finesse and elegance, and Pinot Noir, whose fruitiness, power and structure reflect their terroir. In the cellar, each must is isolated by grape variety and some by plot, before being vinified in temperature-controlled stainless steel tanks. After fermentation, the resulting wines are called ‘vins clairs’. Then comes the delicate art of blending. An art that combines tradition, creativity and humility. All their wines are tasted and some are blended in order to obtain the maximum expression of each of their cuvées. Time is an important factor in the development of their champagnes. It is in the silence, away from the light, in the intimacy of their ageing cellar, that time allows their champagnes to blossom and gain complexity. It is this long period of ageing that gives the aromas their rare delicacy and the bubbles their velvety texture. The wines assert themselves, the aromas exalt, imbued with all the finesse, balance and elegance that characterise the personality of Mademoiselle Marg’O champagnes. The creation of a Mademoiselle Marg’O cuvée is the culmination of a succession of meticulous gestures. From the harvest to the packaging, passing through the vinification, remuage, disgorgement and many other stages, the work is carried out with a single objective, that of finding harmony.
