Tom Gauditiabois
Tom Gauditiabois has been running his small Domaine in Epernay for a few years now, after a career that saw him go to New Zealand and a stint in the cellar at Selosse. 2016 represents his absolute debut vintage, making his first 100% Pinot Meunier cuvée. Quantity and assortment of cuvées will increase from year to year. Both in the vineyard and in the cellar, the production philosophy translates into the logic of the least possible intervention. The greatest effort is concentrated on the vineyard to have the least possible impact on the environment and to harvest healthy grapes. Although it has not yet sought any certification, the Chezy vineyard has not ‘seen’ chemicals for over twenty years. The first champagne is a 2016 Meunier 100% from the Côteaux des Roches in Chézy-sur Marne, old vines facing south on shallow soils with limestone outcrops. It is vinified in 400L barrels and stainless steel tanks. Indigenous yeasts are the only ones to intervene for alcoholic fermentation, followed by malolactic fermentation which takes place spontaneously in the spring. Two new cuvées will be released this year, available from March in an ultra-limited edition of about 100 bottles per type.
